Fall is almost here! (The official “beginning date” of fall is September 23, FYI) Although we are sad to see summer leave, fall is so special in itself, and many of us are anticipating the colorful leaves, crisp air, and the cozy sweaters. I particularly love fall because of all of the outdoor activities, such as visiting the Charlottesville farmer’s market, hiking, and apple picking. One of my favorite things about fall is also the tasty recipes!

As the weather gets colder, many of the juicy, sweet, fruits from summer begin to disappear again. I used to lament the goodbyes I made to the nectarines and peaches every autumn (or I would try to buy them out of season, which is just not the same), but then I realized that embracing each seasons’ unique bounty makes me appreciate each one more, and thus makes them even more delicious when they come around the following year.

This season, let’s embrace fall by incorporating into our meals Earth’s giant autumn berry: The pumpkin!

These recipes are all vegan, meaning they have no animals products in them. Whether or not you want to try a vegetarian/vegan lifestyle full-time, part-time, or once in a while, these fall-inspired recipes will surely delight you. They also tend to be pretty simple, which is nice because now we have more time to spend lounging around the house in our pj’s and fuzzy socks — I mean going outside and enjoying the crisp autumn weather!
